Alle-Pia is, in the best and truest sense of the word, an artisan salumeria. It is located in the Central Coast town of Atascadero where Piemonte natives Antonio Varia and his nephew Alex Pellini create each small batch literally by hand. The seasoned meats are slowly cured without the addtion of nitrites or nitrates. The lardo comes from rare Mangalista pigs noted for their thick, rich layer of fat while the goat salami is from Antonio's own herd.
