Do you have a recipe to share with the PG community?

Guajillo Chicken with potatoes

Serving size: 4 people

Ingredients:
1 pound of chicken legs or thigh
3 Guajillo chilies
1 cup of roman tomato
1/4 cups of onion
1 tsp of garlic
1/4 tsp of dry oregano
1/2 tsp of cumin
1 spoon of Chicken bouillon
2 cups of water
2 Yukon potatoes (cut in 4)
Salt and Pepper to taste

Garnish: (optional)
Lemon
Jalapenos
onions

Soak the Guajillos in warm water for 5 min, Take all the ingredients, excluding the chicken and blend them together. marinate the chicken and potatoes in a baking dish with the blended ingredients for 1 hr. After the hour, bake the dish for 1hr 15 min in 375 degrees. make sure the chicken is soft before removing the dish from the oven.

 

Bio:

Originally from Mexico, Yesenia came to the city of Santa Ana, CA in 1995 where she began working in housekeeping. Five years later she moved to the Bay Area where she began supervising house cleaning services in Redwood City. In 2000 she worked at Gilead Sciences where she cleaned offices. Within six months the kitchen manager offered her a job as a prep cook assisting with catering services for Guckenheimer. This is where she discovered her passion for the culinary arts.

In 2004, she transitioned to Bon Appetit where she worked on the Google campus for 12 years. Moving forward she continued to take on new challenges and accepted a position at Imagine Culinary. Imagine Culinary services the Lyft corporation in San Francisco where they prepare food for 3000 employees.

Yesenia is very passionate about food and cooking. Her organizational skills and drive to challenge herself has ensured both professional and personal growth. Being an immigrant did not stop her from pursuing her dreams and passions and she continues to aspire to be a top chef and open her own restaurant.
